Variety Coarse Lapsi, made from cracked whole wheat, is a flour with visible granules and a rustic texture. After cooking, the grains release a subtle toasted wheat aroma, imparting a wholesome feel in your mouth. Lapsi absorbs water slowly as well as maintains its structure strongly in all recipes. Porridge, upma and khichdi made with this product form a grainy and satisfying dish instead of simply becoming soft.
Sweet lapsi and kansar can also be made, where the taste feels nutty and grounded, and it works well with ghee and jaggery. The coarseness of lapsi prevents mushiness in case you are simmering the lapsi, complementing well with vegetables and cumin.
